Following are the risks that Dynamic-WS might introduce to you:

• Not all major Web Service Engines are supported. Currently only JAX-WS RI is supported, the work for supporing Apache Axis2 and Apache CXF is in progress.
• WS-Security and other Web Service features are not tested yet. If you have to use WS-Secturity for your Web Services, you're not advised to use the current version of Dynamic-WS unless you intend to dedicate time to get it working. The work for insuring that Web Service features work correctly with Dynamic-WS is currently in progress and most probably will be done by the upcoming release.
